Red Cabbage & Mint Salad

 

 

Ingredients:  (Serves 2-3)

1/4 or less of red cabbage

1/2 cucumber

Fresh mint leaves

1 vine tomato

1/5 of red onion

3 green chillies

1/2 lemon

10 baby carrots

Salt to taste

 

How to:

Cut up all ingredients and mix together. Make sure you slice up the carrots and slice the lemon into tiny pieces along with the rind. Add a generous portion of fresh mint and a touch of salt. Leave the chillies whole if you wish. Mix well and enjoy!

 

Recommendations:  Best eaten with grilled meats.
