Roast Pears with Butterscotch Sauce
Easy
Ingredients:
6 pears (of your choice)
1.5 ounces butter
4 and half ounces caster sugar
2 tsp lemon juice
200 ml double cream
1 tsp ground cinnamon
2 and half ounces of any choice of nuts (eg. pecan, flaked almond or a mix (lightly toasted).
How to:
1. Melt the butter in a small pan, add the sugar and cook for about five minutes. Take off the heat and stir in 5 tbsp of hot water along with the lemon juice. Return pan to heat, stir until smooth, then add cream and cinnamon. Simmer, stirring for about five minutes or until evenly combined.
2. Pre-heat the oven to 200 degrees (180 for fan assisted oven) or gas mark 6. Peel the pears and place them upright, packed closely together, in an ovenproof dish. Spoon the butterscotch sauce over the pears and bake 40-50 minutes or until the pears are tender.
3. To serve, put the pears on individual plates and pour some butterscotch sauce over the pear. Decorate with toasted nuts and a cinnamon stick if desired.
